Cinco de Mayo is one of the most celebrated national holidays in Mexico. Every year on May 5, locals celebrate the victory over the French army at the Battle of Pueblo, which their ancestors won in 1862. It was then that they managed to overthrow Napoleon III with his monarchical regime, which lasted from 1864 to 1867.
On this day, Mexicans take to the streets to merge with the costumed crowd and enjoy the songs and dances. Without fail, local residents organize contests for eating hot chili peppers – “jalopeno”, which is grown only in this country.
Another dish that is customary to cook on May 5 is mole sauce. It originated in Pueblo and consists of 30 ingredients (there are different versions of the recipes). The people of the city also stage a reenactment of the battle to honor the dead.
